Waffles for lunch? Why not. This extravaganza is a filling end to a meal, especially decorated with a scoop of ice cream or piles of whipped cream.

Makes 2 servings

¼ cup (½ stick) salted butter
¼ cup brown sugar
2 bananas, sliced into 1-inch pieces
¼ cup chopped pecans
2 Belgian waffles, warmed

1. Melt butter in a medium saucepan over medium-high heat. Add brown sugar and bananas, stirring so sugar dissolves. Heat, stirring occasionally until bananas begin to caramelize and turn golden brown, about 2 to 4 minutes.

2. Place waffles on 2 plates. Divide banana topping between the two waffles. Sprinkle each with pecans and serve.
