Cheeseburger in Paradise…
Pesce Blue (Portsmouth, NH) owner Cliffe Arrand invited us to sample their new lunch menu which includes wallet friendly dishes that put the Pesce Blue whammy on familiar lunch items. I decided after a few bites, that if you ordered a cheeseburger in heaven, it would be chef James Walter’s Carne Rosso Italian Burger: ground sirloin steak (seasoned with their garlic infused sea salt) with melted mozzarella cheese, roasted tomatoes, romaine lettuce, hand torn basil, and house-cured pancetta; served with garlic roasted potatoes wedges and lemon aioli. I also sampled their take on good old New England Chowder, but think of it as a New England bouillabaisse, with a gorgeous piece of pan roasted cod surrounded by clams and mussels in the shell, Yukon Gold potatoes in a perfectly balance cream and sherry base. I could go on and on but I suggest some first person research.
Get a Taste of this…I recently had the opportunity to interview Sheila Lukins, the iconic chef and author of the Silver Palate, now in print for 25 years. Sheila is also the Food Editor of the Sunday newspaper supplement with a circulation of million. In addition to talking with her about entertaining for our upcoming special issue, Taste Celebrations, she pointed me in an unlikely direction for emerging flavor trends: the McCormick spice company. Turns out they have gone far beyond parsley, sage, rosemary and thyme, with new spice blends and pairings from their team of researchers, trend spotters, chefs and “sensory analysts.” Current picks included: coriander and coconut water, chili and cocoa, vanilla and cardamom, poppy seed and rose—complete with recipes. My Name is Jean and I am a Puppodum addict…Since I discovered these Indian crispbreads (for lack of a better word) they’ve become my go-to munchie. Sharwood’s, a U.K. company, makes these traditional rounds from black gram bean flour, and they are available in supermarkets and specialty stores. (Hannaford’s and Philbrick’s Fresh Market have been my suppliers.) They come in regular and spicy, can be crisped in the microwave in 60 seconds or flash fried. And get this: only 20 calories, 0 fat grams and 3 grams of fiber per 6- inch diameter round. Try them with raita, Indian dishes or chutneys.
